At this time of year the waters in Rye Bay are full of food and there isn’t a better time to eat locally caught fish from the day boats from Rye.
This course will give you a unique insight on how the Rye fishing fleet and market operates, what our Head Chef is looking for when buying produce for the Bistro and insiders tips on preparation and recipe ideas.
The day culminates with a delicious feast, showcasing the very best fish and seafood sourced earlier that day, expertly cooked exclusively for you.




TIMETABLE
10.00am
Meet at The Gallivant for a light breakfast with our Head Chef, where he will run through the day’s activities.
10.45am
Depart in a mini bus to the Rye Fish Market to meet with Russell to gain a unique insight into how our local fishery operates and our sourcing policy
12.00am
Return to the hotel for tea/coffee
12.30pm
Master class learning how to use, prepare and cook the ingredients sourced earlier that day. Topics covered will include:
- what to look for and ask when buying fish
- preparation tips
- suggestions on seasonal accompaniments and what’s best to buy
- sourcing information on where to buy the best ingredients
- recipe and complete dinner party menu suggestions focusing on fish and seafood
3.30pm
Gourmet seafood feast, incorporating the ingredients sourced earlier that day, showcasing whatever is at its absolute best served as a variety of courses on large sharing plates and dishes.

This includes all food and hot drinks served during the day and course notes/folder on departure. (The price does not include any alcoholic beverages that guests might want to enjoy with the Gourmet seafood feast.)
